Kimberly's Texas Caviar
Yields: Six 3/4 -cup servings
Ingredients:
2 1/2 cups cooked (1/2-pound dry) black-eyes peas, with enough liquid to moisten
1 red bell pepper, diced
1/2 cup green onions, sliced or 1/4 cup sweet onion, diced
6 artichoke hearts, diced
1/2 cup ripe green olives, pitted, sliced
1/2 cup celery, diced
1 Tablespoon parsley flakes
1 Tablespoon nutritional yeast
1 Tablespoon fresh lemon juice
1/4 teaspoon salt, optional
Directions:
Mix all ingredients together
Chill until ready to serve
