Kimberly's Texas Caviar

Kimberly's Texas Caviar

Yields: Six 3/4 -cup servings


  • 2 1/2 cups cooked (1/2-pound dry) black-eyes peas, with enough liquid to moisten

  • 1 red bell pepper, diced

  • 1/2 cup green onions, sliced or 1/4 cup sweet onion, diced

  • 6 artichoke hearts, diced

  • 1/2 cup ripe green olives, pitted, sliced

  • 1/2 cup celery, diced

  • 1 Tablespoon parsley flakes

  • 1 Tablespoon nutritional yeast

  • 1 Tablespoon fresh lemon juice

  • 1/4 teaspoon salt, optional


  1. Mix all ingredients together

  2. Chill until ready to serve
