Tasty Tuesday-Cashew Breakfast Gravy and Whole Grain Drop Biscuits


Drop Biscuits - Whole Grain

Yield: 10 biscuits


Ingredients:

  • Non-stick spray

  • 2 cups fine barley flour

  • 1 Tablespoon baking powder

  • ½ teaspoon salt

  • ⅓ cup plant-based buttery spread

  • 1 cup unsweetened plant-based milk

Directions:

  1. Preheat oven to 425F. Spray baking sheet with non-stick spray. Set aside.

  2. In a medium mixing bowl stir together dry ingredients.

  3. Add buttery spread to flour mixture. Using a pastry cutter or two knives, cut in spread until mixture resembles coarse crumbs.

  4. Make a well in the center of mixture. Add milk all at once in well of mixture. Using a fork stir just till moistened.

  5. With a tablespoon drop dough on prepared baking sheet, placing biscuits very close to each other (this will help them rise up and not out).

  6. Bake for 10-12 minutes.

Variations: Can use oil in place of buttery spread and reduce milk to ¾ cup. Biscuits may be a bit heavier.

Gluten Free Biscuits: Can replace barley flour with all-purpose gluten-free flour or use recipe below.

Hints: These are best fresh but can be reheat lightly sprinkled with water and loosely wrapped in aluminum foil.

Cashew Breakfast Gravy and Biscuits

Yield: 5 ½-cup gravy with 1-biscuit servings


Ingredients:

  • 1 recipe Drop Biscuits - Whole Grain

  • 1 cup water

  • 1 cup raw cashews

  • 3 Tablespoons tapioca flour

  • ½ Tablespoon onion powder

  • ½ teaspoon garlic powder

  • ¾ teaspoon salt

  • 2 cups water

  • 1 teaspoon lemon juice

Directions:

  1. Prepare biscuits and place in oven.

  2. Blend cashews with water until smooth and creamy.

  3. Add remaining ingredients to blender and blend until well mixed.

  4. Pour into saucepan, stirring constantly, heat over medium heat until thickened. For a thinner, gravy use more water as desired. For thicker sauce, cook longer or decrease water.

  5. Enjoy and Bon Appétit!

Hints: Use this gravy with any recipe that calls for white gravy or sauce. It is lovely over cooked greens or in cream-based soups. If you have a high-powered blender, you can combine all ingredients together without blending cashews first. Do not freeze.
