Tasty Tuesday-Baked or Steamed Squash

Baked Winter Squash

Yield: 2-4 servings

 

Ingredients:

  • 1 winter squash (butternut, acorn, spaghetti, pumpkin, etc.)

Directions:

  1. Preheat oven to 350°F.

  2. Cut squash in half from top to bottom.

  3. Remove seeds.

  4. Place squash in a shallow baking pan, cut side down.

  5. Bake for 40-60 minutes, or until tender.

  6. Enjoy and Bon Appétit!


Steamed Butternut Squash

Yield: 4 servings

 

Ingredients:

  • 1 small butternut squash

  • ¼ - ½ cup water

  • ¼ - ½ teaspoon salt (optional)

Directions:

  1. Steam for 20 minutes over medium-low to medium heat.

  2. Make sure there is a small amount of water in the pan.

  3. Enjoy and Bon Appétit!

 

Variation: Add 2 Tablespoons nut butter.
