Baked Rice with Tea Bag Apples
Yield: 6 servings
Ingredients:
1 cup brown rice, uncooked
1½ cups hot water
1 teaspoon salt (optional)
3 cups Tea Bag Apples (pg. 61)
1 cup vanilla almond milk
1 teaspoon cinnamon
¼ cup dried cranberries or raisins (optional)
Directions:
Combine rice, water, and salt in a medium casserole dish.
Prepare apples and spread out over rice.
Cover with almond milk and sprinkle with cinnamon and cranberries.
Cover with foil.
Bake at 350°F for 90 minutes or until liquid is absorbed.

Tea Bag Apples
Yield: 4 servings
Ingredients:
2 apples, peeled, cored and sliced thin
1 (14-oz) can pears, with liquid reserved
1 cinnamon apple spice tea bag
Directions:
Prepare apples and put them in a large skillet.
Pour just enough of the pear juice to cover the bottom of the pan.
Slice pears and add to pan.
Add tea bag.
Cover skillet and bring to a boil.
Stir, cover again, and reduce heat to simmer.
Simmer apples to desired tenderness (approximately 10-12 minutes).
Remove tea bag before serving.
