Tasty Tuesday-Baked Rice with Tea Bag Apples



Baked Rice with Tea Bag Apples

Yield: 6 servings

 

Ingredients:

  • 1 cup brown rice, uncooked

  • 1½ cups hot water

  • 1 teaspoon salt (optional)

  • 3 cups Tea Bag Apples (pg. 61)

  • 1 cup vanilla almond milk

  • 1 teaspoon cinnamon

  • ¼ cup dried cranberries or raisins (optional)

Directions:

  1. Combine rice, water, and salt in a medium casserole dish.

  2. Prepare apples and spread out over rice.

  3. Cover with almond milk and sprinkle with cinnamon and cranberries.

  4. Cover with foil.

  5. Bake at 350°F for 90 minutes or until liquid is absorbed.

  6. Enjoy and Bon Appétit!

 

Hint: Freezes well


Tea Bag Apples

Yield: 4 servings

 

Ingredients:

  • 2 apples, peeled, cored and sliced thin

  • 1 (14-oz) can pears, with liquid reserved

  • 1 cinnamon apple spice tea bag

Directions:

  1. Prepare apples and put them in a large skillet.

  2. Pour just enough of the pear juice to cover the bottom of the pan.

  3. Slice pears and add to pan.

  4. Add tea bag.

  5. Cover skillet and bring to a boil.

  6. Stir, cover again, and reduce heat to simmer.

  7. Simmer apples to desired tenderness (approximately 10-12 minutes).

  8. Remove tea bag before serving.

  9. Enjoy and Bon Appétit!
