Tasty Tuesday-Lemon Cashew Dandies

Lemon Cashew Dandies

Yield: 10 dandies


  • 1 cup dried pineapple, no added sugar

  • 1 cup golden raisins

  • ½ cup raw cashews

  • 1 teaspoon lemon extract

  • ⅛ teaspoon salt

  • ¼ cup shredded coconut, unsweetened


  1. Combine all ingredients, except coconut in a large food processor and whiz until it becomes sticky and clumps together in one big ball.

  2. Form into small balls (walnut size) and roll in coconut.

  3. Place in airtight storage contain until ready to serve.

  4. Enjoy and Bon Appétit!

Hints: Freezes well.
