Baked Harvest Oatmeal

Baked Harvest Oatmeal

Yields: 9 servings 


Ingredients:

  • 2 apples

  • 2 pears

  • 2 cups cherries, pitted

  • 1 cup cranberries

  • 2 teaspoons cinnamon

  • 1 Tablespoon fresh ginger, minced

  • 1/2 teaspoon orange zest (optional)

  • 2 Tablespoons organic cornstarch

  • 1/2 teaspoon salt

  • 1 cup quick oats

  • 1/4 cup pecans, chopped

  • 1/4 cup pistachios, shelled or green pumpkin seeds

  • 1/2 cup maple syrup

  • 1/2 cup vanilla almond milk


Directions:

  1. Preheat oven to 350°F.

  2. Peel, core and dice apples and pears. Place in 9X9-inch casserole dish.

  3. Add cherries and cranberries to apples and pears.

  4. Sprinkle dry ingredients over apple mixture in the order listed.

  5. Pour syrup and milk evenly over mixture. Cover with foil.

  6. Bake for 45 minutes.

  7. Remove foil, gently stir, and bake uncovered for 15 minutes.


Quick Tip: Freezes well.

Variation: Use pears canned in their own juice in place of fresh pears. Use the liquid from the pears in place of the almond milk. Substitute 1-teaspoon ginger powder for fresh ginger.
