Savory Oatmeal and Veggies
Yields: 2 11⁄2-cup servings
Ingredients:
1 cup vegetable broth
1⁄2 cup old-fashioned oats
1⁄4 cup onion, sliced thin
2 cloves garlic, minced
1⁄4 cup carrot sticks
1⁄4 cup celery
1⁄4 cup red pepper strips
1⁄4 cup pea pods
2 teaspoons vegetable bouillon powder
1 teaspoon fresh lemon juice
1⁄4 cup water
2 Tablespoons sesame seeds or hemp seeds
Directions:
Bring broth to a boil and add oatmeal. Reduce heat to simmer.
Cut vegetables to about the size of match sticks.
Combine remaining ingredients in skillet and sauté over medium-high heat to desired tenderness.
Spoon oatmeal into two bowls and top with veggies.
Sprinkle top of veggies in each bowl with 1 Tablespoon seeds.
