Tasty Tuesday-Savory Oatmeal and Veggies




Savory Oatmeal and Veggies

Yields: 2 11⁄2-cup servings


Ingredients:

  • 1 cup vegetable broth

  • 1⁄2 cup old-fashioned oats

  • 1⁄4 cup onion, sliced thin

  • 2 cloves garlic, minced

  • 1⁄4 cup carrot sticks

  • 1⁄4 cup celery

  • 1⁄4 cup red pepper strips

  • 1⁄4 cup pea pods

  • 2 teaspoons vegetable bouillon powder

  • 1 teaspoon fresh lemon juice

  • 1⁄4 cup water

  • 2 Tablespoons sesame seeds or hemp seeds


Directions:

  1. Bring broth to a boil and add oatmeal. Reduce heat to simmer.

  2. Cut vegetables to about the size of match sticks.

  3. Combine remaining ingredients in skillet and sauté over medium-high heat to desired tenderness.

  4. Spoon oatmeal into two bowls and top with veggies.

  5. Sprinkle top of veggies in each bowl with 1 Tablespoon seeds.
