Blueberry Topping
Yields: 5 1/2-cup Servings
Ingredients:
4 cups fresh or frozen blueberries
1⁄4 cup grape juice concentrate
1 Tablespoons tapioca flour
1 teaspoon lemon juice
Dash salt, optional
Directions:
Place berries and juice concentrate in a medium saucepan.
Heat over medium-high heat until berries are thawed or fresh skins begin to pop.
In a separate container, combine the remaining ingredients and mix until there are no lumps. Pour over berries.
Stir berry mixture until well coated and mixture begins to thicken.
Remove from heat when desired consistency is reached.
Variation: You can use arrowroot in place of tapioca flour. Try adding other flavors: 1⁄2-1 teaspoon ginger powder or 1⁄2-1 teaspoon lemon, orange, or vanilla extracts.
Try adding 2-tablespoons chia seeds after cooking.
Add an additional 1/4 cup juice concentrate and 1-Tablespoon tapioca flour for a sweeter topping.
You can substitute any variety of berries for blueberries. If substituting strawberries, raspberries, etc., use a lighter-colored juice concentrate, such as apple juice.
Hint: Freezes well.
