Gazpacho with Homemade Croutons




Gazpacho

Yields: 3 one cup servings


Ingredients:

  • 6 Roma tomatoes

  • 1 small cucumber, peeled, coarsely chopped

  • 1 red bell pepper, seeds removed, coarsely chopped

  • 1-2 cloves garlic

  • ½ teaspoon salt or salt-free seasoning to taste

  • Thinly sliced cucumbers

  • Homemade Croutons (see below)


Directions:

Combine tomatoes, cucumber, pepper, garlic, and seasoning in a blender in the order given. Blend until smooth. Serve topped with thinly sliced cucumber and croutons.


Homemade Croutons


Ingredients:

  • Whole grain bread


Directions:

Slice whole grain bread into cubes. Spread out on a baking sheet in a single layer and place in 225°F oven. Toast for 20-25 minutes or until dry. Remove from oven and allow to cool. Store in an airtight container.


Serve as a topping over the Gazpacho.
