
Ginger Dill Carrots
Yields: 4 Servings
Ingredients:
4 medium carrots, peeled with tops and tips removed
½ lemon, juiced
½ - inch cube fresh ginger pressed
½ teaspoon dill
½ teaspoon salt (optional)
Directions:
Peel carrots and remove tops.
Place in a steamer basket and steam over medium-high heat until tender (approximately 10 minutes).
After steaming, place carrots on a serving plate.
Drizzle with lemon juice and fresh ginger.
Sprinkle with dill and salt.
Serve.
Variation:
May substitute orange juice for lemon juice
