Lithuanian Overnight Muesli


Recipe from Dana’s Latest Cookbook: The “Meat and Potatoes” of Plant-Based Cuisine Yield: 2 servings Prep Time: 30 minutes Chill Time: overnight This is a great one-dish meal. With everything you need to start the day off right! One serving is 1½ cups, adjust amount according to your need.


Ingredients:

½ cup raw oats

2 cups berries

½ cup date pieces

¼ teaspoon salt

¼ teaspoon ginger

1 cup pineapple juice ½ cup nuts and seeds Directions: Combine all ingredients in a medium mixing bowl. Mix well. Divide between two coverable bowls and place in refrigerator.

In the morning top with nuts and seeds.

Variations:

1. Replace pineapple juice for juice of choice or plant-based milk.

2. Can blend dates, honey and juice together if desired. Replace date with dried fruit of choice.

3. Substitute fruit of choice for berries. If using apples, pears or peaches, add them to the

bottom of the individual bowls with the mixture on top and mix into cereal in the morning.

4. I sometimes add 2-Tbsp. chia seeds with overnight mixture, so it is a grab and go in the

morning. Sometimes I add ½-cup additional juice as well when adding the chia seeds.
