Marty’s Sidewalk Noodles

Yield: 6 servings
Ingredients:
8 oz. spaghetti or your favorite long pasta
1 Tablespoon salt
½ cup green cabbage, finely sliced
½ cup carrot, shredded
½ cup celery, finely sliced
½ cup broccoli stalk, finely sliced
½ cup red bell pepper, finely sliced
¼ cup onion, sliced
2 clove garlic, minced
1-inch fresh ginger, finely sliced
1 can bamboo strips, finely sliced
1 can water chestnuts, finely sliced
2 Tablespoons tahini
1/3 cup creamy cashew butter
2 Tablespoons agave syrup
3 Tablespoons fresh lime juice
1 Tablespoon Bragg’s® Liquid Aminos
1 teaspoon ginger powder
½ teaspoon Mrs. Dash® Chipotle
½ teaspoon Tajin®
1½ cups pasta cooking water
Directions:
Bring a large pot of water to a boil.
Cook noodles according to directions.
While pasta is cooking, prepare vegetables.
Set aside.
Combine sauce ingredients in a medium mixing bowl and whisk together until evenly mixed.
Reserve 1½ cups pasta cooking water.
Drain pasta and return to pan.
Add prepared vegetables and sauce to pasta.
Cook over medium heat until well combined and evenly heated.
Serve immediately.
