Simple Romaine Salad
Yield: 4 Servings
Ingredients:
4 cups romaine lettuce, cut or torn
1 cup tomatoes, chopped or grape tomatoes
½ cup red bell pepper, chopped
½ cup cucumber, sliced or chopped
2 Tablespoons red onion, diced, optional
Directions:
Combine all ingredients in a salad bowl.
Add dressing just before tossing and serving.
Dressing
Ingredients:
⅓ cup plant-based mayo
3 Tablespoons salsa
1 Tablespoon nutritional yeast
¼ teaspoon oregano
¼ teaspoon onion powder
⅛ teaspoon seasoned salt
⅛ teaspoon garlic powder
Directions:
Combine all ingredients and whisk together.
Store in refrigerator until just before ready to serve.
