Tasty Tuesday: Strawberry Spinach Salad with Strawberry Dressing
Yield: 1 cup
¼ cup fresh lime juice
¼ cup agave nectar
¼ teaspoon salt
¼ teaspoon basil
½ cup strawberries
¼ cup oil
¼ teaspoon xantham gum
Combine lime juice, agave nectar, salt, basil and strawberries in blender and blend.
While still blending, drizzle in oil and, lastly, the xantham gum.
Chill and shake before serving.
Strawberry Spinach Salad
Yield: 6 servings
1 (10 ounce) bag spinach
1 cup sliced almonds or coarsely chopped walnuts, roasted
½ cup toasted coconut flakes or ¼ cup untoasted shredded coconut
⅓ cup red onion, sliced thin
2 cups strawberries, sliced
Combine all ingredients in a large bowl and toss.
Top with Strawberry Dressing and serve immediately. Bon Appétit!
