Tasty Tuesday: Avocado Coleslaw

Avocado Coleslaw

Yield: 3 servings



  • 1 fresh ripe avocado, pitted and skin removed

  • 2 Tablespoons lemon juice

  • 1 Tablespoon water

  • ¼-½ teaspoon salt (optional)

  • ¼ teaspoon cumin

  • 3 cups prepackaged cabbage with carrot mixture or make your own

  • ¼ cup spring onions

  • 2 Tablespoons minced parsley


  1. Place the first five ingredients in small blender or bullet and blend on medium low until smooth.

  2. In a medium bowl, combine remaining ingredients.

  3. Pour blended dressing over cabbage and toss gently until evenly mixed.

  4. Best if served immediately. Can cover with plastic wrap, pushing it down on slaw and refrigerating for a few hours, until ready to serve.
