Avocado Salad
Yield: 6 1-cup servings
Ingredients:
3 Hass avocados or 2 cups, mashed
1 cup fresh avocado chunks
1 Tablespoon fresh onion, minced
1-2 cloves garlic, minced
¼ cup tomato, finely diced
¼ cup cucumber, finely diced
2 Tablespoons each finely diced celery, bell pepper, olives, parsley, or cilantro
¼ teaspoon salt
⅓ cup soy-free, plant-based mayo, optional
6 lettuce leaves, torn or shredded
Directions:
Combine prepared vegetables, salt, herbs, and mayonnaise in a mixing bowl.
Shred or tear lettuce and divide evenly on 6 salad plates or bowls. Place 1/6 of avocado mixture on top of lettuce on each plate.
