Tasty Tuesday-Avocado Salad



Avocado Salad

Yield: 6 1-cup servings


Ingredients:

  • 3 Hass avocados or 2 cups, mashed

  • 1 cup fresh avocado chunks

  • 1 Tablespoon fresh onion, minced

  • 1-2 cloves garlic, minced

  • ¼ cup tomato, finely diced

  • ¼ cup cucumber, finely diced

  • 2 Tablespoons each finely diced celery, bell pepper, olives, parsley, or cilantro

  • ¼ teaspoon salt

  • ⅓ cup soy-free, plant-based mayo, optional

  • 6 lettuce leaves, torn or shredded


Directions:

  1. Combine prepared vegetables, salt, herbs, and mayonnaise in a mixing bowl.

  2. Shred or tear lettuce and divide evenly on 6 salad plates or bowls. Place 1/6 of avocado mixture on top of lettuce on each plate.

  3. Enjoy and Bon Appétit!
