Tasty Tuesday-Baked Sweet Potatoes with Zesty Black Beans

Baked Sweet Potatoes

Yield: 4 servings


  • 4 small (4-oz) sweet potatoes


  1. Scrub sweet potatoes until completely clean and poke superficial holes all over the sweet potatoes and place on a parchment paper lined baking sheet.

  2. Bake at 400℉ for 1 hour or until desired texture is reached. May need to adjust time based on the size of the sweet potatoes.

  3. When a fork can go easily all the way through the potatoes, or when the juices start flowing, they are done.

Zesty Black Beans

Yield: 6 ¾-cup servings


  • 2 Tablespoons water

  • ½ cup onion, chopped

  • 2 cloves garlic, pressed

  • ½-1 teaspoon cumin

  • ½-1 teaspoon chili powder

  • ¼-½ teaspoon Mrs. Dash® Chipotle seasoning

  • ½ cup red bell pepper, diced

  • ½ cup yellow bell pepper, diced

  • ¼ cup salsa

  • 2 cups cooked black beans

  • 1 avocado, diced


  1. In a medium pot combine water, onion and garlic, and cook over medium heat until onion is translucent.

  2. Add remaining ingredients.

  3. Simmer until vegetables are tender.

  4. Serve over sweet potato and top with a ¼ of an avocado.
