
Cheezy Millet & Polenta
Yield: 2 servings
Ingredients:
1 cup millet
4 cups water
1 teaspoon salt (optional)
½ cup polenta
½ cup coarse ground millet
½ cup Cheez Sauce
¼ cup Tofutti® cream cheese (optional)
1 teaspoon onion powder
1 teaspoon garlic powder
¼ teaspoon Mrs. Dash® Chipotle (optional)
Directions:
Place millet in a dry blender. Pulse to a coarse meal. Set aside.
In a small saucepan, according to package directions, bring water and salt to a boil.
Whisk in polenta and millet.
Reduce heat, cover. Stir occasionally while cooking until tender (~5-20 minutes, will depend on size of grain and desired texture and consistency).
Serve. Bon Appétit!
Variations: Can use commercial plant-based cheese in place of Cheez Sauce for a quicker option. Can use all millet or all polenta instead of both.
Serving Suggestion: Serve with Breakfast Beans, and sliced, Scrambled Tofu, and diced tomatoes. Yummy!
