
Cherry Vanilla Oatmeal
Yield: 3 1½-cup servings
Ingredients:
1½ cups water or plant-based milk
¾ cup old-fashioned oats
½ teaspoon vanilla
¼ teaspoon salt
½ teaspoon ginger
Directions:
Bring water or milk to a boil.
Stir in oats and next three ingredients.
Return to a boil. Turn off heat and cover.
Let sit for 10 minutes or to desired consistency.
Ingredients for Toppings:
1½ cups Cashew Pear Topping
1 cup cherries, pitted, fresh or frozen
3 Tablespoons coconut, shredded
3 Tablespoons Roasted Pecans, chopped
3 Tablespoons hemp seed
Directions:
Add Cashew Pear Topping and cherries to oatmeal and stir.
Top each serving with other desired toppings.
Serve! Bon Appétit!
Quick Tips:
Freezes well. Will need to stir before serving.
Variations:
Use steel-cut oats and increase water to 3 cups.
Try ¼-cup dried cherries in place of fresh or frozen cherries.
Cashew Pear Topping
Yield: 6 ½-cup servings
Ingredients:
2 small fresh pears
2 Tablespoons raw cashews
1 teaspoon vanilla extract
1 Tablespoon honey, optional
Directions:
Remove core from pears.
Place all ingredients into blender and blend.
If needed add 2-4 Tablespoons water, juice or plant-based milk and blend until very smooth.
Pour over hot cereal.
Hints:
Can be frozen but may need to be re-blended
Roasted Pecans
Yield: 6 ¼-cup servings
Ingredients:
1½ cups pecans
Directions:
Spread pecans in a single layer on baking sheet.
Bake at 275℉ for approximately 30 minutes.
Allow to cool. Store in airtight container.
