Tasty Tuesday: Deluxe Tossed Salad with Artichokes

Deluxe Tossed Salad with Artichokes

Yield: 6 (1-cup) servings

 

Ingredients:

  • 2½ cups (1/4 head) romaine lettuce, chopped

  • 1 cup (packed) fresh baby spinach

  • ½ cup garbanzos, drained

  • ½ cup kidney beans, drained

  • ¼ cup olives

  • ½ cup tomatoes, cubed or grape tomatoes

  • ¼ cup grated carrot

  • ½ cup red or yellow bell pepper, chopped

  • 2 Tablespoons purple onion, chopped

  • 2 Tablespoons jicama, diced (optional)

  • 1 14-ounce can artichokes, canned, drained, quartered

  • ¼ cup chopped fresh parsley


Directions:

  1. Mix all ingredients in a large bowl.

  2. Serve with your favorite Kick-Start dressing.

  3. Enjoy and bon Appétit!
