
Deluxe Tossed Salad with Artichokes
Yield: 6 (1-cup) servings
Ingredients:
2½ cups (1/4 head) romaine lettuce, chopped
1 cup (packed) fresh baby spinach
½ cup garbanzos, drained
½ cup kidney beans, drained
¼ cup olives
½ cup tomatoes, cubed or grape tomatoes
¼ cup grated carrot
½ cup red or yellow bell pepper, chopped
2 Tablespoons purple onion, chopped
2 Tablespoons jicama, diced (optional)
1 14-ounce can artichokes, canned, drained, quartered
¼ cup chopped fresh parsley
Directions:
Mix all ingredients in a large bowl.
Serve with your favorite Kick-Start dressing.
