Yield: 4 servings
6 Roma tomatoes
1 small cucumber, peeled, coarsely chopped
1 red bell pepper, seeds removed, coarsely chopped
1-2 garlic cloves
½ teaspoon salt or to taste
1 Tablespoon extra-virgin olive oil, optional
Wheat-free Croutons (see below)
Thinly sliced cucumber
Combine vegetables in blender in order given. Blend until smooth.
Drizzle in olive oil through small lid opening while blender is whizzing.
Top with thinly sliced cucumber and croutons and serve immediately.

Homemade Wheat-free Croutons Slice wheat-free bread into cubes. Cubes can be left plain or placed in a bowl and sprinkled with 1-2 teaspoons oil and desired seasonings such as: oregano, basil, dill, seasoned salt, onion powder, garlic powder, parsley, Mrs. Dash, etc. Spread out on a baking sheet in a single layer and place in 225℉ oven. Toast for 20-25 minutes. Remove from oven and allow to cool. Store in an airtight container. Nutritional Facts per serving:
