Creamy Millet
Yields: 3 one cup servings
Ingredients:
3 cups almond milk
1 cup millet
1 teaspoon vanilla
1/2 teaspoon salt, optional
Directions:
In a medium pot bring almond milk to a boil. Add millet, vanilla and salt. Cover and reduce heat to medium-low. Simmer until liquid is absorbed, approximately 20 minutes. Fluff millet with fork.
Strawberry Mango Topping
Yields: 3 half-cup servings
Ingredients:
1 cup fresh mango (1-2 mangos)
2 T raw cashews
1/2 teaspoon lemon extract
Dash of salt, optional
1 cup fresh or frozen strawberries
Directions:
Wash, peel, cut mango, and discard seed. Place all ingredients in a blender. Blend until smooth.
Serve as a topping over the Creamy Millet and then top with your favorite fresh fruit, nuts, and seeds.
