Five Bean Salad




Northern Fruit Salad

Yields: 6 one cup servings


Ingredients:

  • 15-ounce can cut green beans, rinsed and drained 

  • 15-ounce can cut wax beans, rinsed and drained 

  • 15-ounce can kidney beans, rinsed and drained 

  • 15-ounce can garbanzo beans, rinsed and drained 

  • 1 cup lima beans, cooked, cooled and drained 

  • ½ cup canned artichoke, diced, drained 

  • ½ cup red onion, diced 

  • ½ cup red bell pepper, diced 

  • ¼ cup lemon juice 

  • ¼ teaspoon thyme 

  • ¼ - ½ teaspoon salt (optional) 


Directions:

In a large mixing bowl combine all ingredients and mix well. Cover and refrigerate. Allow to marinate for several hours.
