Quiche Filling


Quiche Filling

Yield: 8 servings Prep Time: 20 minutes Bake Time: 60 minutes

Ingredients:

16-ounces super tofu, drained

½-¾ cup water

¼ cup organic corn meal

½ teaspoon turmeric

1 teaspoon onion powder

½ teaspoon garlic powder

2 Tablespoons nutritional yeast

½ teaspoon seasoned salt

1 teaspoon Himalayan black salt

1 teaspoon lemon juice

¼ cup red pepper, diced

1 cup fresh greens or broccoli, minced

¼ cup onion, minced

1 clove garlic, minced

Directions:

Pre-heat oven to 350°F.

Press liquid out of the tofu and crumble into a blender. Add next 8 ingredients to blender. Blend until smooth. Pour into mixing bowl and set aside.

Prepare vegetables. If softer vegetables are preferred sauté in 2-Tablespoons water in large skillet over medium heat until tender stirring occasionally until vegetables are tender.

Add prepared vegetables to batter in mixing bowl. Mix well. Pour into prepared crust.

Bake for 45-60 minutes.


Variations: Crustless Quiche: Add an extra 2 tablespoons cornmeal to blender

mixture for extra firmness. Spray baking pan with non-stick pan spray and pour

batter into pan.
