Savory Red Beans(Slow Cooker Method)
Yield: 8 1/2-cup Servings
Ingredients:
1 cup dry red beans
4 cups water
½ teaspoon salt to taste
3 cloves garlic, minced
1 large onion, sliced
1 teaspoon cumin
1 teaspoon dillweed
1 teaspoon dulce
4 cups of water
Directions:
Sort beans, removing unwanted beans. Wash beans and then place in slow cooker. Cover with water.
Let them soak for 8 hours.
Add remaining ingredients. Stir. Cook on low overnight or on high for 6 hours.
Need a Faster Method? After sorting beans, place in a pressure cooker and bring beans to a boil. Boil for 2 minutes and then turn off heat. Allow to soak for 2 hours. Pour off water from beans and rinse. Add 4-cups of water to beans and remaining ingredients. Place lid and jiggler on pressure cooker and heat over medium-high heat until jiggler starts jiggling. Reduce heat to medium or medium-low (just enough to keep the jiggler moving) and cook for 20 minutes. Remove from heat and run cool water over pressure until pressure is release. Your beans are now ready to serve!
Electric Pressure Cooker Directions: After sorting beans, place in an electric pressure cooker and bring beans to a boil. Boil for 1 minutes with “keep warm” setting turned off. After 2 hours, pour off water from beans and rinse. Add 4-cups of water to beans and remaining ingredients. Place lid on pressure cooker, set for 25 minutes. I like to use slow-release method, but they will be ready if you want to release the pressure as soon as the 25 minutes are up.
Hints: Freezes well.
