Simple Marinated Kale

Simple Marinated Kale

Yields: 6 one cup servings


Ingredients:

  • 1 bunch curly green kale

  • 1 Tablespoon extra-virgin olive oil

  • ¼ - ½ teaspoon salt

  • 1 Tablespoon nutritional yeast


Directions:

  • Wash kale and remove stems (save stems for another recipe like a soup or smoothie). 

  • Tear or cut kale into bite-size pieces and place in a large mixing bowl.

  • Massage oil into chopped kale. 

  • Add salt and nutritional yeast and mix well. 

  • Cover and refrigerate until ready to serve.


Variation: 

  • Add any additions of your choice such as nuts (like roasted pecans or walnuts), seeds (such as roasted pumpkin, sesame, or sunflower seeds), fresh or dried fruit (pomegranate, cranberries, golden raisins), beans (garbanzos, kidney beans), vegetables (pepper), etc.
