Tasty Tuesday-Mock Chicken Noodle Soup

Mock Chicken Noodle Soup Yield: 4 1-cup servings


  • ½ cup Soy Curls®

  • 3 cups water

  • ¼ teaspoon garlic powder

  • ½ Tablespoon onion powder

  • ¼ teaspoon turmeric

  • 2 Tablespoons nutritional yeast flakes

  • 1 Tablespoon fresh parsley

  • 1½ teaspoons salt

  • ½ cup ditalini or ribbon noodles, dry

  • 1 cup rehydrated Soy Curls®


  1. Place soy curls in a bowl and cover with water. Allow to soak for 10 minutes.

  2. Drain off water and set aside.

  3. Combine water and seasonings and bring to a boil.

  4. Add pasta and reduce heat to a gentle boil.

  5. Cook until pasta is tender (approximately 10 minutes).

  6. Chop or shred soy curls to small pieces.

  7. When pasta is tender add soy curls.

  8. Heat to desired temperature and serve.

  9. Bon Appétit!

Variations: Mock Chicken and Vegetable Soup: Leave out pasta. Add vegetables of choice: onion, garlic, carrot, celery, kale, etc. Nutritional Facts per 1-cup:
