
Non-Dairy Alfredo Sauce
Yields: 4 cups
Ingredients:
1 cup water
1 cup raw cashews
3 Tablespoons cornstarch
1½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon salt
2 cups water
1 Tablespoon lemon juice
3 Tablespoons non-dairy parmesan cheese
2 ounces of non-dairy white cheese
Directions:
Blend cashews with water in a blender on high until creamy smooth (no grittiness).
Add cornstarch, seasonings, water, and lemon juice to a blender and blend until creamy. Pour into a medium saucepan.
Add cheeses and place mixture over medium heat, stirring constantly, until thickened.
Serve.
Variations: You can substitute 8-ounce non-dairy cream cheese for either parmesan or white cheese.
