Tasty Tuesday-Pumpkin Granola



Pumpkin Granola Yield: 12 cups


Ingredients:

  • 10-13 cups raw rolled oats

  • 1 cup pecan pieces or ½ cup pecan meal

  • ½ cup pumpkin seeds

  • ¼ cup nut or seed butter

  • 1 cup maple syrup

  • 1 15-oz can pure pumpkin

  • 2 teaspoons salt

  • 2 teaspoons pumpkin pie spice or ginger

  • 2 teaspoons vanilla/pumpkin pie spice extract

Directions:

  1. Combine oats, pecans, and pumpkin seeds on a large baking sheet and mix well.

  2. Combine remaining ingredients in a bowl and pour over oats.

  3. Stir until well mixed. Spread out evenly over baking sheet. Stirring every 15 minutes, bake for 1½ hours at 250°F.

  4. Remove granola from oven and allow to cool. Store in an air-tight container.

  5. Enjoy and Bon Appétit!

Hints: For sweeter granola add ½ cup brown sugar. Nutritional Facts per ¼ cup:
