Pumpkin Granola Yield: 12 cups
Ingredients:
10-13 cups raw rolled oats
1 cup pecan pieces or ½ cup pecan meal
½ cup pumpkin seeds
¼ cup nut or seed butter
1 cup maple syrup
1 15-oz can pure pumpkin
2 teaspoons salt
2 teaspoons pumpkin pie spice or ginger
2 teaspoons vanilla/pumpkin pie spice extract
Directions:
Combine oats, pecans, and pumpkin seeds on a large baking sheet and mix well.
Combine remaining ingredients in a bowl and pour over oats.
Stir until well mixed. Spread out evenly over baking sheet. Stirring every 15 minutes, bake for 1½ hours at 250°F.
Remove granola from oven and allow to cool. Store in an air-tight container.
