Spanish Whole Grain Rice
Yield: 3 ½-cup servings
Ingredients:
½ cup brown rice
½ cup onion, chopped
2 cloves garlic, minced
¼ cup water
½ cup tomato, diced
1 cup vegetable broth
⅛ teaspoon cayenne pepper
½ teaspoon cumin
½ teaspoon fresh oregano, minced
¼ teaspoon salt
Directions:
In a medium saucepan, toast rice over medium heat, stirring constantly for 4-5 minutes.
Add onion, garlic, and water. Cook for 2 minutes, stirring constantly.
Add tomato and cook another minute.
Add broth and seasonings. Stir and bring to a boil.
Reduce heat to low, cover and simmer for 40 minutes or until rice is tender and liquid is absorbed.
