Tasty Tuesday-Spanish Whole Grain Rice


Spanish Whole Grain Rice

Yield: 3 ½-cup servings


Ingredients:

  • ½ cup brown rice

  • ½ cup onion, chopped

  • 2 cloves garlic, minced

  • ¼ cup water

  • ½ cup tomato, diced

  • 1 cup vegetable broth

  • ⅛ teaspoon cayenne pepper

  • ½ teaspoon cumin

  • ½ teaspoon fresh oregano, minced

  • ¼ teaspoon salt

Directions:

  1. In a medium saucepan, toast rice over medium heat, stirring constantly for 4-5 minutes.

  2. Add onion, garlic, and water. Cook for 2 minutes, stirring constantly.

  3. Add tomato and cook another minute.

  4. Add broth and seasonings. Stir and bring to a boil.

  5. Reduce heat to low, cover and simmer for 40 minutes or until rice is tender and liquid is absorbed.

  6. Enjoy and Bon Appétit!
