Waldorf Salad
Yield: 8 1/2-Cup Servings
Ingredients:
4 fresh apples, diced
1 Tablespoon fresh lemon or lime juice
¼ cup celery, diced,
¼ cup dates, chopped and/or raisins
¼ cup walnuts, chopped
1 cup grapes, chopped, optional
½ cup pineapple, diced
¼ teaspoon seasoned salt
¼ cup plant-based mayonnaise
Directions:
Prepare ingredients and combine until well mixed.
Chill until ready to serve.
Variations: Add lemon extract and pineapple to plant-based mayo and blend until creamy. Combine mixture with fruit and chill until ready to serve.
