Cucumber Tomato Salad



Cucumber Tomato Salad

Yield: 4 1-cup servings


Ingredients:

Dressing

  • 1 Tablespoon fresh dillweed(or 1 teaspoon dried)

  • 1 teaspoon onion powder

  • ¼ teaspoon garlic powder

  • ¼-½ teaspoon salt

  • 1 Tablespoon extra-virgin olive oil

  • 1 teaspoon lime juice

Salad

  • 3 cups Roma tomatoes, chopped

  • 2 cups cucumbers, chopped

  • ¼ cup purple onion, sliced


Directions:

  1. In a medium mixing bowl combine dressing ingredients.

  2. Add vegetables to the dressing and toss to coat evenly.

  3. Chill and serve.
