Avocado Cabbage Salad

Yield: 6 servings Ingredients:
1 ripe fresh avocado, pitted and skin removed
1/4 cup fresh lemon juice
2 Tablespoons water
1/2-1 teaspoon salt
1 Tablespoon agave, optional
1/2 teaspoon cumin
6 cups pre-packaged cabbage with carrot, or make your own
1/2 cup spring onions
1/4 cup cilantro or parsley, minced
Directions:
Place first 6 ingredients in blender and blend on medium-low until smooth.
In a large bowl combine remaining ingredients or make your own cabbage carrot mixture. Pour blender dressing over cabbage mixture and toss gently until evenly mixed. Chill until ready to serve.
Hint: Because avocado oxidizes easily, turning brownish, make only enough to eat at one meal and serve as soon as possible.
