Carob Chip Cookies

Yield: 18 cookies Prep Time: 30 minutes Bake Time: 15 minutes Cool Time: 10 minutes
Ingredients: Parchment paper
1 cup carob chips
1½ cups whole wheat pastry flour
½ teaspoon baking soda
1 teaspoon egg-replacer powder
¼ teaspoon salt
2 teaspoons vanilla
1/3 cup maple syrup
¼ cup vanilla non-dairy milk
2 Tablespoons applesauce
Directions:
Preheat oven to 375°F.
Cover cookie sheet with parchment paper and set aside.
Combine all ingredients in a large bowl in the order given and mix well.
Drop batter with the heaping teaspoon onto cookie sheet.
Bake for 12-15 minutes, or until light brown.
Cool 10 minutes on cookie sheet, then transfer to wire racks to finish cooling.
Store cookies in an airtight container.
