Baked Spinach Balls

Yield: 18 balls Prep Time: 25 minutes Bake Time: 30 minutes
Ingredients:
1 medium potato, chopped
1 small onion
¼ cup walnuts
¼ cup water
½ teaspoon salt
½ cup quick oats
½ cup whole grain dried breadcrumbs
½ cup whole grain cracker crumbs
2 teaspoons beef style seasoning
1 teaspoon sage
½ cup Bulgur Burger Crumbles
¼ cup non-dairy sour cream
2 cups frozen chopped spinach
Directions:
Take spinach out of freezer and set aside.
Wash potato (do not peel), cut into chunks that will fit into your food processor.
Place potato, onion and walnuts in food processor and process into small chunks.
Add water and salt to a large skillet, then add food processor mixture to skillet.
Cover and cook over medium heat, stirring occasionally until potatoes are tender and onions are clear.
While skillet mixture is cooking, combine oats, bread, cracker crumbs and seasonings in a large mixing bowl.
When vegetables and nuts are tender add them to the mixing bowl.
Add the remaining ingredients to mixing bowl and mix well.
Preheat oven to 350°F.
Line baking sheet with parchment paper.
Shape mixture into walnut size balls and place on parchment.
When all the balls are made, put in preheated oven and bake for 40-55 minutes or until nicely browned.
Quick Tips: Forgot to thaw spinach? Run it through food processor to break it up. Freezes well.
Variations: Omit cracker crumbs and use 2-cups of breadcrumbs. Instead of forming mixture
into balls, make into patties, cook in a skillet, on a griddle or bake in the oven.
