Baked Sweet Potatoes with Honey Orange Glaze

Yield: 6 servings Prep Time: 20 minutes Bake Time: 40 minutes Cool Time: 10 minutes
Ingredients:
3 cups sweet potatoes
½ cup fresh orange juice
2 Tablespoons honey
¼ teaspoon coriander
¼ teaspoon cardamom
¼ teaspoon ginger
6 Tablespoons walnuts, chopped
6 Tablespoons pecans, chopped
Directions:
Peel sweet potatoes, then cube into bite-size pieces. Set aside
Preheat oven to 400°F.
In a large mixing bowl whisk together orange juice, honey, and seasonings.
Add prepared sweet potatoes and toss.
Spread out evenly in a large baking dish.
Bake for 30 minutes or until sweet potatoes are tender.
Chop nuts.
When sweet potatoes are tender, reduce heat to 275°F.
Sprinkle nuts over sweet potatoes and bake for an additional 10 minutes.
Remove from oven. Allow to cool for 10 minutes before serving.
Quick Tips: Can be made ahead and frozen but add the nuts after it is thawed.
