Deluxe Tossed Salad with Creamy Cucumber Dressing

Deluxe Tossed Salad

Yields: 5 servings


  • 1 cup romaine lettuce, chopped

  • 1 cup (packed) fresh baby spinach

  • 8 olives

  • 1/4 cup grape tomatoes

  • 2 Tablespoons carrots, grated

  • 1/4 cup red or yellow bell pepper, chopped

  • 2 Tablespoons purple onion, chopped

  • 2 Tablespoons fresh parsley, chopped

  • 1/2 cup garbanzos, drained

  • 1/2 cup kidney beans, drained

  • 4 artichoke hearts, quartered, drained

  • 2-4 Tablespoons nutritional yeast, optional

  • 2-4 Tablespoons freshly ground flaxseed, optional


Blend all ingredients in a large mixing bowl. Mix well. If not serving right away, do not mix beans and artichoke into salad until just before ready to serve. Sprinkle nutritional yeast and freshly ground flaxseed on each serving and serve.

Creamy Cucumber Dressing

Yields: 10 two tablespoon servings


  • 1/2 cup cucumber

  • 1 cup plant-based mayo

  • 2 Tablespoons unsweetened plant-based milk

  • 1 Tablespoon honey

  • 1 teaspoon onion powder

  • 1/4 teaspoon garlic powder

  • 1/4-1/2 teaspoon salt

  • 1/2 Tablespoon fresh, minced or 1/2 teaspoon dried each: parsley, dill weed, basil


Blend first seven ingredients together. Pour blender mixture into a bowl. Stir in herbs. Cover and chill until ready to serve.
