Maple Flax & Nut Bars

Yield: 15 bars Prep Time: 20 minutes Bake Time: 15 minutes


Ingredients: 1¼ cups walnuts, ground

¼ cup shredded coconut

¼ cup toasted wheat germ

1/3 cup whole wheat pastry flour

¼ teaspoon salt

¼ cup quick oats

1/3 cup flaxseed meal

½ cup maple syrup

2 teaspoons vanilla extract


Directions:

Preheat oven to 350°F.

Mix all ingredients in a large mixing bowl.

Line a 9 X 11-inch pan with parchment paper.

Spread batter evenly over dish about ¼ inch thick.

Cut into 2x2-inch squares or 1x3-inch rectangles.

Bake for 10-15 minutes.

Cool on wire rack.
