Summer Tomato Bisque

Yield: 6 servings Prep Time: 15 minutes
Ingredients: 1 cup vegetable broth
¼ cup raw cashews
2 Tablespoons nutritional yeast
¼ teaspoon garlic powder
¼ teaspoon oregano
1½ teaspoons onion powder
½ teaspoon basil
1½ teaspoons salt
1 29-ounce tomato puree
2 Tablespoons agave nectar
Directions:
Blend cashews and broth in blender until creamy smooth.
Add remaining ingredients and blend until well mixed.
Chill until ready to serve.
Quick Tips: With a high-powered blender, combine all ingredients with cashews. Whiz until smooth.
Variations: Serve warm or chilled. Pour into a medium kettle and simmer for 10 minutes, stirring constantly, until desired temperature is reached. Can also keep a high-power blender running until desired temperature is reached.
