Tasty Tuesday-Crustless Quiche
Yield: 8 servings
16-ounces extra firm or super tofu, drained
½-¾ cup water
¼ cup & 2 Tablespoons organic corn meal
½ teaspoon turmeric
1 teaspoon onion powder
½ teaspoon garlic powder
2 Tablespoons nutritional yeast
½ teaspoon season salt
1 teaspoon Himalayan black salt
1 teaspoon lemon juice
¼ cup red pepper, diced
1 cup fresh greens, minced
¼ cup onion, minced
1 clove garlic, minced
Pre-heat oven to 350°F.
Press liquid out of the tofu and crumble into a blender.
Add the next 8 ingredients to blender.
Blend until smooth.
Pour into mixing bowl and set aside.
Prepare vegetables. If softer vegetables are preferred sauté in 2 Tablespoons water in large skillet over medium heat until tender stirring occasionally until vegetables are tender. Add in any extras from variations below, as desired.
Add prepared vegetables to blender mixture. Mix well.
Spray baking pan with non-stick pan spray and pour batter into pan.
Bake for 45-60 minutes.

Variations: Choose any green leafy vegetable. Add 1 cup vegetarian sausage or other meat alternative, ½ cup Cheez Sauce (p. 135), plant-based cream cheese or sour cream, 2 Tablespoons minced parsley, 1 tomato, diced, ½ cup broccoli, diced, ¼ cup olives, sliced.
