Slow Cooker Orange Mango Multigrain Hot Cereal

Yield: 6 1/2-cup servings Ingredients:
1/4 cup brown rice farina
1/4 cup steel cut oats
1/4 cup millet grits
1/4 cup buckwheat, whole
2 cups water
1 cup unsweetened plant-based milk or more water
1/2 teaspoon salt
1 teaspoon ginger powder
1 15-ounce can mandarin oranges, sweetened with fruit juice
3 cups Orange Mango Topping Directions:
Add all ingredients to 2-quart slow cooker. Stir. Cook on low overnight or 3 hours on high
(may need to adjust for your slow cooker).
In the morning, fluff with a fork and serve with Orange Mango Topping and nuts or seeds of choice.
Quick Tip: Stove top directions: Bring liquids to a boil. Whisk in remaining ingredients. Reduce heat
to a light boil and cook for approximately 20-30 minutes or until desired texture is reached. Read the
cooking directions on the labels of the grains and cook according to the longest time listed.
Hints: Freezes well.
Variations: You can buy a multigrain hot cereal and use 1-cup or make your own grain combination according to grain preferences.
Orange Mango Topping
Yield: 8 1/2-cup servings
Ingredients:
1 cup dried mango, unsweetened
1 15-ounce can mandarin oranges, sweetened with fruit juice
1 20-ounce can crushed pineapple
1-inch cube fresh ginger
1/2 teaspoon orange zest, optional
1 teaspoon orange flavoring
Directions:
Combine all ingredients in a high-powered blender.
Blend until creamy smooth. Serve over hot cereal and top with your favorite
nuts or seeds.
