Chili Beans

Yield: 6 1/2-cup servings
Ingredients:
1 pound red or pinto beans
6 cups water
1 1/2 teaspoons salt
1 onion, finely diced
2 teaspoons onion powder
1 Tablespoon garlic powder
1/4 teaspoon cumin
1/4- 1 teaspoon chili powder
1/4 cup tomato sauce
Directions:
Sort and discard unwanted beans and then rinse. Place in large pot, cover with water and bring to a boil. Boil for two minutes and remove from heat. Cover and let soak for one hour. Drain. Add another six cups water. Add salt. Bring to a boil again. Reduce heat and simmer for one hour or until beans are tender. Add remaining ingredients and simmer for 15 more minutes or until onion looks clear and flavors are blended.
Quick Tip:
After soaking, place beans and remaining ingredient in pressure cooking, and cook for 30 minutes.
