Stir-Fried Green Beans
Yields: 4 1/2 Cup Servings
Ingredients:
4 cups fresh green beans
1 clove garlic, minced
1⁄4 cup onion, sliced
1 Tablespoon extra-virgin olive oil
1⁄2 teaspoon salt
1⁄2 teaspoon dill
Directions:
Wash and string green beans (snap if desired). Place in steamer and steam for 15-20 minutes or until desired texture is reached.
While green beans are steaming, sauté garlic and onion in oil in a large, deep skillet.
Add green beans, dill, and salt to skillet. Stir-fry for a couple of minutes. Serve.
Variations: May substitute 1 teaspoon onion powder and 1⁄2 teaspoon garlic powder for fresh onion and garlic, or you can add it as additional flavoring. To reduce calories, steam garlic and onion in water instead of sauteing in oil.
