I served this delightful Broccoli Soup with Rice Cakes at our very first Sunny Dawn Acres Health Retreat. One of the participants asked if I had ever had Rice Cakes Toasted. I answered “No.”
Intrigued, we all had to give it a try! It quickly became a beloved addition to our regular menu.

Broccoli Soup
Yield: 6 1-cup servings
Ingredients:
1 cup onion, finely diced
¼ cup water
½-1 teaspoon salt
2 cups broccoli, finely diced
1 cup water
¾ cup raw cashews
2 Tablespoons nutritional yeast
½ teaspoon onion powder
¼ teaspoon garlic powder
1 teaspoon seasoned salt
2 cups water
1 teaspoon lemon juice
Directions:
Combine onion, water and salt in a medium saucepan and sauté until onions are transparent.
Add broccoli and 1-cup water and simmer until broccoli is tender.
While broccoli is simmering, combine remaining ingredients in blender and blend until smooth.
When broccoli is tender, add blender mixture to pot and stir constantly until thickened to desired consistency.
Serve. Bon Appétit!
